Matt's Munchies (Just Snacks) GIVE-AWAY!

Good Evening friends! I hope this finds you well! 


All is great here, we had a fun school holidays, school is back for the big girls now, I have been busy connecting with some AMAZING women in Sydney the last few days (more on that another day!) and as always I am chasing my tail (but happy about it!). I don’t know about you but I am always out of my ‘normal routine’ (whatever that may be at the time!) when it’s school holidays and as much as I love the holidays, there is a little part of me that enjoys getting back into that routine again!


A few years back I met the beautiful Amelia from Just Snacks at A Gluten Free Fair and we have chatted many times since and always supported each other. Amelia has been kind enough to offer some snacks (some of my favourites) to 2 lucky friends!

Sweet Chilli Relish

Good Afternoon friends! I hope this finds you well. How are the school holidays treating you? My girls still have a few days left before they go back to school, we have had a heap of fun, full busy days and today we are having a much needed day at home!

A fun day out at ‘Amazement’ with my 4 kids and some friends of ours!


On good friday we had some friends over for lunch and they tried my homemade ‘Sweet Chilli Relish’ …. they LOVED it! YAY! I posted it a while ago on Fb but as we know things get lost there so I thought I would share it here also … it is a perfect recipe for those of you that have a chilli plant at home going out of control! Enjoy!

Sweet Chilli Relish


138 home grown small hot chillis (ha ha yes I counted them) – approx 700g


(my chillis were orange but any will do!)


1 onion


2 cloves garlic


2cm x 2cm chunk ginger


1/4 cup apple cider vinegar


1 cup rapadura sugar


TMX VERSION: Place the chilli, onion, garlic and ginger into the bowl and chop on speed 6 for 10 seconds.


Add the apple cider vinegar and rapadura and cook for 20 minutes – 100c – speed 2.


ALTERNATE VERSION: Place the chilli, onion and ginger into a food processor and chop on medium – high speed for 30-40 seconds.


Add all the ingredients to a  small saucepan and simmer on medium heat for approx. 20 minute until the desired consistency. Stir several times throughout this process to ensure it doesn’t burn. 


Allow to cool slightly before storing in glass jars.

Chocolate and Caramel Slice

Good Evening friends ….. I have been working on this recipe for a little while now and finally have it (in my eyes) perfect! It ticks all my boxes for a sweet treat … it is quick and easy to make, it is Gluten free, Dairy free, Additive free, Refined Sugar free and tastes SENSATIONAL! There is not much more I can say about it …. besides give it a go and let me know if you love it as much as me!

Chocolate and Caramel Slice


Base


1 cup desiccated coconut (110g)


½ cup raw brazil nuts (60g)


10 medjool dates – pitted (140g)


2 tspns cacao


Caramel middle


1 cup raw cashews (140g)


90ml coconut cream (90g)


8 medjool dates – pitted (120g)


1 tspn vanilla essence


Chocolate top


½ cup coconut oil (50g)


½ cup maple syrup (150g)


2 tblspns cacao


Line a meatloaf tin with baking paper and set aside.


Place all the ingredients for the base into a food processor and blitz on medium – high speed for 1-2 minutes or until thoroughly combined.


TMX = 40 seconds / speed 8


Put the base mix into the tin and push down evenly. Set aside.


Put all the ingredients for the caramel middle into the clean food processor and blitz on medium – high speed for 2-3 minutes or until ‘almost’ smooth – scrape down the sides 2-3 times during this process.
TMX = 10 seconds / speed 8. Scrape down sides. 1 minute / speed 3. Scrape down sides – then a further 1 minute / speed 3.


Put the caramel mix on top of the base and spread evenly. Put in the freezer whilst making chocolate top. 


Chocolate top: Place all the ingredients into a small saucepan and melt over a low heat, stirring constantly until thoroughly combined. Leave on a low heat for 10 minutes – stirring occasionally – be careful not to burn it.


TMX: 10 minutes / 37c / speed 3. Scrape down sides. Then, 5 minutes / 50c / speed 4.


Remove the tin from the freezer and pour the chocolate over to form an even layer top. Return to freezer for at least 1 hour before cutting and enjoying.


Store in freezer!

Easter Show and Easter Sale!

Good afternoon friends! I hope this finds you all well and that you had a wonderful weekend. 


We are all well here and enjoying a quiet day today after a few jam packed days and late nights – including a LONG rainy day out at The Royal Easter Show on Thursday (left home 9am and got home 10.30pm!) Miss ‘almost’ 12 has danced there the last few years with BJP Physie so we had no choice of which day to go …. it was a little disappointing that the day we went was raining but we were not going to let that ruin our day …. we made the most of it, bought ponchos and still had fun! The kids loved the baby animals and rides and the Physie presentation as always was amazing.

Coconut and Spices Beef Casserole

Good Morning friends, I hope this finds you well and having a lovely week so far. 


We are all well here, the kids are SUPER excited as it is ‘one more sleep’ until we head to the Easter Show. It is the first day tomorrow and for the 3rd year in a row my Miss almost 12 is dancing there with 300 Physie friends in the main arena. 


I had some beef out to throw on the BBQ on Sunday night for dinner with salad but ended up having friends over the watch the Football and filled ourselves with snacks instead (nuts, avocado dip, crackers, vegetable sticks, bliss balls, carrot cake and many other Gluten Free goodies!) ….. so the meat wasn’t used. Monday night I knew I had to use it but hubby is the BBQ cooker and wouldn’t be home until late so I decided to throw it together with some other ingredients for a casserole ….. so glad I did …. it was loved by all, I served it with some steamed beans and broccoli and pappadums AND there was enough for 2 nights dinners! BONUS! 


Here is my recipe …. hope you enjoy it also …. a perfect one to keep on file for the cooler nights that are fast approaching!

2 tblspns oil


1 kg beef diced


1 kg chat potatoes – quartered


4 carrots – peeled and cut 2cm pieces


½ cauliflower – cut into large chunks


4 cloves garlic


1 tblspn coriander


1 tblspn cumin


1 tspn turmeric


1 tspn cinnamon


1 tspn thyme leaves


½ tspn cardamom


½ tspn salt


800g crushed tin tomatoes (or homemade tomato sauce)


270ml coconut cream


Place all the ingredients except for the tomatoes and coconut cream into a heated stove top casserole dish and stir over a medium – high heat until meat is browned.


Add the tomatoes and cover the entire food with water.


Reduce heat to low, place the lid on the dish and cook for 2 hours. Stir 2-3 times during this time.


With 10 minutes to go add the coconut cream and heat through.


Serve immediately.


Enjoy! 


NOTE: You can do this meal in the slow cooker also – you will need to adjust the cooking time though.
