Guest blog and recipe from Kristin - MAMACINO!

Good afternoon! I hope this finds you all well and that you had a beautiful weekend!

I am thrilled to be able to bring to you another guest blog and free recipe from a gorgeous Facebook friend of mine, this lady is funny, smart, obviously gorgeous and has a beautiful blog that I just love following…..I hope you enjoy reading her story as much as I have and I am sure you will LOVE keeping up with her wonderful blogs too!

Tell us a little about yourself and your Family…

I’m Kristin.  I am a mother to three gorgeous children who are 9, 6 and 2.  My husband works away from home about six months of the year so I’m a sole parent a lot of the time.  We live at the beach which we love and enjoy an outdoors kind of lifestyle.  My daughter has a condition called Pyroluria which means we need to take a lot of care with what we eat.  I am really passionate about organic, whole food eating and I love to cook and share food with friends and family.

I am mostly a stay at home mum but by trade I am a teacher and still make guest appearances at my kid’s school as an Emergency Teacher.  Most days for me involve cooking, transporting children around, getting organised and writing for my blog, Mamacino.

How big a part does food play in your overall daily health?

Food plays a really big part in my family’s health, in fact, I would say it’s the most important factor.  We try to stick to real, whole foods and have a mainly gluten free and dairy free diet.  My mother’s family is Italian and so I have inherited the need to feed! It makes me feel great when I know my family are getting as many nourishing and nutritious meals and snacks as possible.  Some may say I am even a little food obsessed!

What inspires you?

When I look around and see some of the amazing things other Mums like me are doing for health and well being I get incredibly inspired.  I’m also a very visual person so anything that is presented beautifully, from a gorgeous recipe on a favourite blog to a big display or organic fruits and vegetables at the Farmer’s Market inspires me and gets the creative juices flowing!

What is one piece of advice you could pass on to other Mums?

Appreciate every effort that you make to secure the health and happiness of your family and yourself.  I have been known to be a bit of a perfectionist, but this doesn’t serve me well.  Aim to do better.  Every small step that is taken in the right direction a better life should be celebrated and even if things go a little awry, don’t worry about it…tomorrow is a whole new day.

If you could have dinner with any three people in the world, who would it be and why?

This question has really got me thinking…just three people?  I’ll keep it food related.  Firstly, I think I would invite my Italian Great Grand Mother so I could ask her lots of questions about traditional Sicilian cooking and hopefully get her to teach me how to make her famous ravioli.  I think Gwyneth Paltrow – seems like a funny choice but I really relate to her and we have shared a very similar path health wise (not so much the movie star, famous millionaire side!).  She seems down to earth and has an equal passion for health and wine!  It would be great to chat about motherhood with her.  And finally…maybe the Olivers.  I love Jamie and Jools and would love to have their entire brood around for a big rowdy fun filled feast and chat about how real food is making a come back!

Please tell us three fun facts about yourself.

I have a passion for nineties rap music and do a mean Ice T impersonation…but only after several champagnes.

I am the world’s worst disco dancer, despite studying dance fairly seriously until I was eighteen.

My secret dream is to travel the world learning about food and different cultures and then to write a book about it…despite being happily married, I AM Liz Gilbert and that was my book, she just wrote it before I could get to it!

QUINOA AND VEGETABLE SURPRISE

This recipe is so versatile; it’s not really even a recipe!  This is how I made it but you could really use whatever you have in the fridge.

Makes 4 large or 12 small slices

 

Ingredients:

2 carrots, grated

Small piece of pumpkin, grated

Kernels from one cob of corn

A handful of parsley, chopped

1 cup of cooked quinoa

4 eggs, free range or organic

Sea salt and freshly ground pepper to season

A handful of grated parmesan to top with, if you like – optional

What to do:

Mix all ingredients in a bowl (except parmesan which you will sprinkle on top before cooking) and pour into a lined 20cm, square cake tin.

Bake for 30 minutes at 180C or until brown and set firm.

Allow to cool a little before slicing.  Serve hot or cold with a favorite sauce.

Options:

  • Add some chopped cooked chicken or a can of drained tuna.
  • Substitute the quinoa for cooked brown rice.
  • Add chopped tomatoes and basil for an Italian twist or spinach and feta if you prefer Greek.
  • Use other vegetables such as zucchini, potato, capsicum, peas, asparagus (risky, but some kids like it…don’t they?).
  • Put slices in a whole grain roll with lettuce and good quality tomato sauce to make a veggie burger.

Guest Interview: Bianca from Wholefood Simply

Good Morning and HAPPY FRIDAY! I hope you have  had a wonderful week…things have been a tad quieter around here with my big girls going back to school….its sweet how Master and Miss 2  1/2 miss them so much during the days when they go back!

I am thrilled to have ‘met’ so many lovely and like minded people due to the world of Facebook and I am pleased to introduce you to a lovely lady today….I hope you love reading her interview, LOVE her recipe she is sharing with you today and enjoy keeping up to date with her blog, stories and scrumptious recipes….

* Tell us a little bit about you and your family …

Without my family I don’t really know who I am: I am them, they are me. So I will just ramble about all of us. We are a family of four. We have not experienced living close to our families or lifelong friends for several years now. We have moved around and lived in some trying places. We are always together; we are everything to each other and we know not what it is like to be apart. My husband keeps us all in line; he is practical and sensible whereas I am impulsive and airy.  Our daughter is delightful, compassionate and clever. Our son is determined, strong willed, and excited. I like to think that together it creates a nice balance, and at times it does.

 * Please tell us more about your business and what a typical workday looks like for you? 

Wholefood Simply is about sharing easy, fun and delicious recipes that embrace real foods. Our recipes are suitable for all ages, and are especially well tested on fussy little beings. We have many recipes that are free from common allergens and we aim to take the deprivation out of dietary restrictions.

My work day starts with getting my daughter off to school and myself to the gym. Following that my son and I generally whip up a little something up in the kitchen. He goes off to bed and I catch up on any food photography, blogging or reviews that are pending. 2:50pm rolls around and it is back to being Mum, school pick up, homework, baths and dinner.

* How big a part does food play in your overall daily health?

 I believe that a healthy diet is essential to reaching ones full potential and being the best we can be. There are certainly symptoms that cannot be managed by food alone; however by consuming an optimal diet we are giving ourselves and our children the best chance at both exceptional health and happiness. This all starts and ends with the choices we make each day.

* What inspires you?

 My list is endless. First and foremost I am inspired by my Husband and Mother. They believe in me, it is their confidence that keeps me going and prevents me from drowning in self doubt. I am also inspired by my amazing friends and trainers at the gym, who again see more in me than I see in myself. Last, but certainly not least, I am inspired by the Wholefood Simply community who write to me or stop me just to say they love what I am doing, that it has helped them or their family. It is these people who keep Wholefood Simply ticking on, and to whom I am incredibly thankful to have on our team.

* What is one piece of advice you could pass on to other Mums?

Relax. Slow down. Remind yourself of all the wonderful things you do each day and let the rest go.

* If you could have dinner with any 3 people in the world who would it be and why?

It would be three of my family members, who exactly would depend on the day. I would be choosing from my wonderful parents, my kind hearted Aunty, my adored Cousin, and my amazing Grandma, I miss them all terribly. Whilst I love where we live and the wonderful people I have met, family has warmth of its very own. It would be great to be sharing my recipes with all of them.

* Please tell us 3 fun facts about yourself.

 I love country music, my all time favourite song is ‘Any Old Wind That Blows’ by Johnny Cash, does anyone else know it?

I do not watch television, I do not read newspapers. This was never a conscious decision, nor was it the way I was raised. For me it is normal, for those around me it perhaps is not.

My three favourite books are Edwurd Fudwupper Fibbed Big, Wilfred Gordon Mcdonald Patridge and Passing On, followed very closely by Pearl Barley and Charley Parsley. They are exceptional kids books that I would love everyone to read, I know them off by heart and some days they make me cry!

Biscuity, with no biscuits. Sweet, with no sweetener. Gooey and fudgey and loaded with goodness. Try it, right now, it only takes a minute and is truly divine.

Chocolate Fudgey Goodness

1 heaped cup brazil nuts

1 firmly packed cup medjool dates, pits removed

1 large banana

3 rounded tablespoons cacao/cacoa

2 heaped tablespoons coconut oil

1/4 cup goji berries

Lightly grease a 20x20cm square cake tin with coconut oil. Place the first five ingredients into your blender in the order listed above. Blend until well combined but still with some nutty bits. Add the goji berries and gently mix them through. Pour mixture into prepared cake tin, smooth it out and freeze. Leave it to set for a few hours before cutting. Store in the freezer. Enjoy!

I am super pumped about this creation, and equally as excited to be sharing the love and hearing your views on our rich, sweet, nutrient packed, almost instant ‘chocolate fudgey goodness’. I wish I could home deliver you all a piece, but I can’t; so jump in the kitchen, bang it together, and get back to me!

"eggy muffins" two ways

Good Evening! The other day I created (spur of the moment) these ‘eggy muffins’ they were devoured within no time by my children! When I posted this photo and recipe on Facebook I had a few people ask if there was another option besides coconut flour and macadamia oil….so I tried them again today using slightly different ingredients….here they are 2 versions of the ever so yummy and handy to throw together ‘eggy muffins’….GLUTEN, DAIRY AND PRESERVATIVE / ADDITIVE FREE…..

In a large bowl place:
7 eggs
1/2 cup sifted coconut flour
1 grated carrot
1 handful baby spinach – finely shredded
1/2 cup macadamia nut oil
1 tblspn chia seeds
1 tspn mixed herbs
1/2 tspn baking powder
pinch salt

Mix all ingredients extremely well. 
Preheat oven to 180c and place 12 muffin cases into a tray. 
Spoon even amounts into the cases.

Cook for 20 minutes.

Makes 12

Version 2……

In a large bowl place:

1 grated zucchini
1/2 large grated carrot
1/2 cup sunflower oil
1 tblspn chia seeds
1 tspn mixed herbs
1/2 tspn baking powder
pinch salt

Mix all ingredients extremely well. 
Preheat oven to 180c and place 12 muffin cases into a tray. 
Spoon even amounts into the cases.

Cook for 20 minutes.

Makes 12

Both versions are great…it just depends on which flour and oil you prefer….if either of these don’t suit then you can simply swap for flour and oil of your choice.

"eggy muffins" two ways

Good Evening! The other day I created (spur of the moment) these ‘eggy muffins’ they were devoured within no time by my children! When I posted this photo and recipe on Facebook I had a few people ask if there was another option besides coconut flour and macadamia oil….so I tried them again today using slightly different ingredients….here they are 2 versions of the ever so yummy and handy to throw together ‘eggy muffins’….GLUTEN, DAIRY AND PRESERVATIVE / ADDITIVE FREE…..

eggy muffins

"eggy muffins" two ways

My Best Friend's Wedding ;-)

Last weekend I was honoured to stand by the side of one of my best friends as her Matron of Honour on her Wedding Day. I have known her since she was 9 years old and whilst the age gap seemed huge back then (I am 8 years older than her) as the years have passed our age gap isn’t as noticeable and I am blessed to have her in my life as one of my best friends and almost like a little sister to me.

As they live interstate it was a whirlwind few days as the soon-to-be married couple only flew in 2 days before the wedding day! Thankfully most things were organised besides a hiccup with a birth certificate and a relaxing and fun few days were had.

The day before the wedding we went to lunch at a gorgeous little cafe in Holgate called Bamboo Buddah – I love the relaxing atmosphere  and of course their amazing Vegetarian food.

The day was glorious and for winter we could not have asked for better weather….the sun was shining….it was truly perfect. 

We had a girly morning just the bride, mother of the bride and myself getting ready, listening to music, watching a movie (well it played in the background) and lots of yummy healthy food ….

To make us all gorgeous we knew we were in the safe hands of hair stylist and makeup artist Sarah from Couture Artistry. She did our hair and makeup exactly as we wanted them…..we could not have been happier!

It was a small wedding party with me being the only female, the best man was the grooms brother and my darling 2 1/2 year old twins were flower girl and ring bearer…..I was so unbelievably impressed with them and thrilled that they made it down the aisle without crying or causing a drama (anyone with a 2 year old should be nodding and knowing exactly what I am talking about!) and lets not forget to mention just how CUTE they looked!

My sister snapped away with heaps of photos for me (YAY!) I am obsessed with photos (would love to see you over at Instagram collette_cutoutthecrap) and I took a few on my phone also…I hope you enjoy seeing them!

I CAN NOT wait to see the professional photos….Tim from Tim Jones Wedding Photography was such a lovely and genuine man whose passion for his job showed the minute he walked in to the apartment. He had never met any of us before but oozed confidence with what he had to do whilst keeping the bride happy! I was lucky enough to get a sneak peak of a few photos on the camera and as I say I CAN NOT wait to see more!
