YUMMY bars......

I am EXCITED to share with you this YUMMY recipe I created last week.....it was devoured by the entire family and the big girls wrapped it up like like individual bars and took them to school for morning tea......YAY that they loved it.....double YAY that it was healthy and gluten, dairy, egg, soy, nut and preservative free......triple YAY that it was quick and easy to make.....

Yummy Bars
Preheat oven to 180oC

In a food processor place....

1 cup dates
½ cup craisins
½ cup pepitas
½ cup sunflower seeds
¼ cup chia seeds
¼ cup agave nectar
Pinch of salt


Mix well for 30 seconds


Add
1 cup of puffed rice

Mix for another 10 seconds

Line a lamington tray with baking paper and press date mixture firmly and evenly into the tray


Bake for 10 minutes

Allow to cool for 10 minutes at room temperature and then cut into peices (I did mine like muesli bars)


Then allow to cool completely at room temperature
Store in an airtight container

YUM!


10 minutes out of my day making this once or twice a week is well worth it, especially when it is compared to "bought" products.....

We don't have dessert unless we have guests over but the other night I needed something sweet after dinner, so threw together these "apple fritters".... it's the same mixture that I use for our weekly pancakes.....having no raising agent they are not all fluffy but they taste great and we love them just the same......I don't have an "exact" recipe, but they are not hard to do, so just have a play with the milk/flour quantity.....


In a large bowl place rice flour (approx 1 cup), 2 tblspns agave syrup, 1/2 tspn cinnamon, 1 egg and rice milk (I dont measure it, and just add it until its a nice "pancake" consistency) Start off with 1/2 cup of rice milk and gradually add from there. Using a hand whisk, whisk well.
Heat a little oil in a small fry pan.
Core 2 green apples and cut in 1/2cm slices.

For pancakes, simply pour mixture into heated, oiled frypan and flip when it bubbles.
For apple fritters, dip the apple peices into the mixture, coat well and quickly put into the frypan. Turn when golden.
Serve with cinnamon and sugar and fresh lemon juice!
Other fruit can be used also like banana, pineapple and pear :-)
DELICIOUS!
